Exigencies of Angus Certified Beef:

1• Breed
The animals should have 66% of black coat or solid Red. Regarding mixed breed they must have a minimum of 51% of Angus blood when crossed with another British race, 66% of Angus blood when one is a continental race and 75% of Angus blood if crossed with East Indian breed.

2• Maturity / Age
Only young cattles, young bulls up to 6 teeth and vaquillonas up to 4 teeth will be certified. This means only precocious animals wil be accepted.

3• Tipification and Clasification
The following categories of clasification and tipification will be accepted:

- Novillito (milk teeth): II,NN,AA
- Novillo joven ( 2 to 4 teeth): IJ,NJ,AJ
- Novillo (6 teeth): I6,N6,A6
- Vaquillona (4 teeth): VQI,VQN,VQA

4• Fat cover
A minimum of 6mm of fat cover, measured in the Longissimus Dorsi muscle between the 12th and 13th rib.

5• Marmoreo
A minimum degree of "slight" equivalent to the USDA standards to highlight and guarantee tenderness, taste and juiciness of meat.
